In the new iOS 12.2 update, which is currently in testing, Apple has restricted access to the accelerometer and gyroscope in Safari for privacy reasons. So if you want to use the features while browsing, you will have to turn them on in Settings.

Apple is responding to a recent magazine article with the change Wired, who highlighted the fact that mobile websites have essentially unlimited access to phone sensors. The obtained data can be used not only to control some elements on the website, but it could also be easily misused. On iPhones and iPads, access to the sensors will be denied by default.

It's likely that Apple will keep the feature turned on by default later on. However, if a website requests access to the gyroscope and accelerometer, the user will need to approve it. After all, it is the same now in the case of using the current location.
